Coffee cherries may be processed in three main different ways:
- If only sun-dried after harvest and before roasting, it is called “dry process”.
- If bathed to get clear of their pulp, and only then dried, the beans are “washed-processed”.
- Finally, they are “honey-processed” if manually cleared of their pulp and then dried.
Quality coffees offer to the consumer strongly specific tastes. This very specificity may be even hunted for in order to create new sensations and thus enhance awareness of nature gifts.
Honey, Wet and Dry processes offer three different chances of varying flavours.
